The setting that tells the camera what "white" is, so colours render correctly.

Auto white balance (AWB) works well in most situations. For specific mood lighting (warm lamps, candles) you can disable auto and set a fixed Kelvin value. Shooting RAW makes this easy to adjust afterwards.
