How long the sensor captures light - from a fraction of a second to minutes.
A fast shutter speed (1/1000 sec) freezes motion. A slow shutter speed (1/30 sec or slower) creates motion blur - beautiful for water or light trails, but requires a tripod or steady hand. Rule of thumb: use at least 1 divided by your focal length to avoid camera shake.
